Our wild fermented Pinot Noirs have always shown tremendous dimension and outwardly beautiful aromatics, but until 2019 these barrels were only blended with other inoculated Pinot Noir barrels as small but essential components of every Pali Pinot Noir. Bottled on its own, our Wild Series Pinot Noir is unmistakably old-world in style embodying a gem-like garnet color, delicate earthiness, and an alluring perfume. Today, our Wild Series Pinot Noir is made from sustainably farmed Pinot Noir grapes grown on Pali Vineyard in the Sta. Rita Hills in Santa Barbara County. This wine is fermented using wild, naturally occurring yeasts and without the use of conventional winemaking tools and additives including sulfur throughout its elevage. It is fermented in small lots and then aged in entirely neutral French oak barrels for 90 days. This wine is unfined and unfiltered and will naturally develop sediment.
